I suggest you to uninstall the graphic card driver and reinstall the latest driver from the manufacturer's website to check if it helps.
Follow these steps to un-install the drivers:
1. On the search bar type " Device Manager"
2. On the left pane locate "Display Adapter" and expand by clicking on it
3. Right on the " Graphics card" option and click "Uninstall'
4. Download the latest Graphics card driver setup file from the manufacturer's website and install it.
Also install all the latest drivers available from the manufacturer website. Refer the below article for steps to update the drivers from the manufacturer.

It's a custom build and like I said I've not had this problem until recently so I doubt it's the hardware but it's not allowing me now to go onto the windows update tab in settings even if I run it using the directory it keeps exiting the window

What happens when it crashes? Do you get a blue screen? Does the system just shut down? Or does it appear to keep running, but just doesn't output video?
If you're using a dedicated graphics card, and have a processor or chipset with integrated graphics, try removing the graphics card and running games/video off integrated graphics. Obviously gaming performance will be lower, but if the crashes go away, that narrows the problem down to the dedicated graphics card and its drivers.
I'd also try tracking graphics card temperatures with one of the many monitoring utilities out there (HWMonitor, GPU-Z), just to make sure it's not getting too hot.

Ran Black ops 3 on Highest graphics and nothing happens for 2 hours then turned of machine for about 12 hours come back and go on a video streaming site and the PC crashes the screen goes black (sometimes with very thin white lines) then audio becomes stuck and the machine becomes unresponsive. I have run HWmonitor while playing videos and all temps and power usage is normal so can't figure out whats wrong. To be fair I'd rather go back to windows 7 than remove the graphics card and go back to integrated graphics.

It sounds like a video card issue. Get a utility to monitor internal temps, CPU and GPU specifically. Although you would think that playing a video game at high graphics would run hotter than simple video streaming, but who knows.
I've been having problems with my video driver just giving out on me. Not doing anything special, just driving Word and FF on 2 screens (one is 4K, yippee for me!) A recent driver update seems to have fixed the problem. But since you say you already have the current drivers in place, Hint: did you check at the video card manufacturer site? (don't just rely on Win update!), then try downgrading to one version earlier. Maybe the newest version is buggy?!?

I'm not suggesting going to integrated graphics permanently. That would be horrible.
But if the problem goes away when temporarily using integrated graphics, that narrows down the scope of the problem. From what you described, the problem could be anywhere. It could be a defective RAM stick, a bad sector on the hard drive, a CPU issue, a bad graphics card, bad GPU drivers, a motherboard problem, or a bad PSU.
Or, if you have another graphics card lying around, temporarily swapping graphics cards would be an even better way to chase down whatever's responsible. If it only happens with the graphics card you're currently using, then the problem is with that GPU.
